My wife is a really great cook and sometimes she even tells me that she wanted to be a chef when she was younger. I tell her that it’s not too late and she should just keep on cooking. She always asks me why I always encourage her and I just tell her that as a husband it’s my duty to encourage her. But what she didn’t know is that I had a surprise for her.
On her 40th birthday I surprised her with a complete set of Maxam stainless steel cookware. She loved them very much but then it wasn’t the end of my surprise. When one has a small kitchen, it is important to have enough space for all the items being used for cooking and baking. Organization and planning is important; this way the space would look much wider than it actually is. It allows people to have plenty of space to move around. A few days ago, my Asian friend called me and said she’s going to cook for me her specialty called Caldereta. Caldereta is a rich tomato-based stew that is spicy and Spanish inspired. My friend told me that during occasions or fiestas in her home country, it is one of the staple food present at the table. So, I prepared my stock pots and waited for her to come over. I’m sharing the recipe with you so please do try it and I’m sure you will enjoy. You can do some variations with the meat that you use from beef, pork, chicken or goat. Here’s her basic recipe for 4 to 6 servings.
- Mix the beef (2lbs, round or chuck, cubed), 1/4c white vinegar, 1/4c soy sauce and 1/4c minced garlic (some say the more garlic the better) together in a large bowl. Marinate, refrigerated, for 1-8 hours. Remove the meat from the marinade and pat dry, reserving the marinade.
- Heat 2-3T of oil over medium-high flame in a large pot. Brown the beef in batches, removing it to a plate or bowl.
- When the beef is all browned, add more oil to the pot if needed and sauté 1 chopped onion, 1chopped bell pepper (I like using both red and green) and garlic over medium flame until the onions are translucent.
- Add 2c. tomato sauce and simmer for 3-5 minutes to cook down somewhat.
- Return the beef to the pot, along with the reserved marinade and 2c. of stock or water. Bring to a boil then reduce heat to medium-low and simmer, covered, for about 30-40 minutes.
- Stir in the 2c peeled and cubed potatoes, 1c peas, salt and pepper (to taste) and simmer for another 20-30 minutes, or until the beef is tender and the potatoes are cooked through. Add a little more water if necessary.
- Remove the pot from the heat and stir in the 1/4c liver pâté if using.
- Adjust seasonings to taste and serve hot over rice.
- You may also want to try browning 1/2 pound of sliced chorizo sausage along with the beef and add to the stew or Adding 1/3 cup pitted green olives when you add the potatoes and peas. You may also try adding different vegetables: cabbage, carrots, and cassava root. And for a spicier Caldereta, feel free to add chili powder or cayenne to taste.
