cast iron grill pans

August 14th, 2009

I have a cast iron char griller lying in the bottom of my cabinet for pots and pans. I have not used it in a long time, but now that I was re-introduced to cast iron grill pans, I am determined to take it out, check it out for re-seasoning if needed and have some chops or fish for the weekend. My char griller features a handle that folds up when not in use. I have discovered that storage is made easier if the grill is wrapped in a plastic bag. It prevents oxidization which affects its non stick qualities.

I find cleaning out a cast iron cookware a bit of a hassle. I envy cooks on TV who just wipe the grill pan with paper towels and they are ready for another cooking session or be stored in the cabinet. I find it a little bit disarming to keep used cookware without at least rinsing it in soap and water. How can I keep the oil from turning rancid? Now I remember why it is in the bottom of my cookware cabinet.
