Prepare meat without much difficulty. Use a meat cleaver that is used to sever bones and joints. Some blades are slightly curved while others are tapered. In general, however, the square blade has a razor sharp edge that must be kept sharp through proper use and regular sharpening.
There are cleavers that are molded as a single piece with the metal handle blending with the blade. Others come with a wooden handle mounted onto the blade. Whatever design you choose the handles of meat cleavers are shaped and textured to provide maximum gripping ability. Too, every part of the knife can be put to good use as the blunt top edge can be used to pound and tenderize meat while the flat side can be used for smashing garlic and ginger.
