Are there still places where you will not find cast iron cookware? You will find cast iron cookware in remote country homes as well as modern city dwellings. In stores, they are displayed side by side with gleaming non-stick aluminum ware, the symbol of the modern kitchen. Cast iron griddle is the more popular kind of cast iron cookware that we are familiar with. But did you know that there are also teapots and baking pans made of cast iron?

We have always associated cast iron cookware with campfire cooking. The reason for the popularity of this kind of cookware in camping is that you can use it on almost any form of fire, however crude. You can set it up on pieces of stone harboring wood flames in its midst. It may not sit as level as you would want it, but it will distribute heat just as evenly. You can set up a tripod and cook your favorite stew in a pot hanging from it. Give it time and it will cook your meat to your desired tenderness.

Cant Wait to Eat

Learning how to cook is a joy. No other feeling beats smelling perfectly cooked food. For me, the hardest thing to do is to resist eating freshly cooked turkey, roast beef or even breads and cookies on cooling racks. The smell is just overpowering. Actually, the only thing stopping me from attacking the food is if I do, I’ll end up with a burnt tongue.

Cooling racks will cool the food on the outside while still slightly cooking the insides. If for example, you cooked roast beef and you carve it right away, you risk losing all the juice of the meat and drying it up right away. When the meat dries up it becomes tough as nails. Also a cooking rack will help the fat to drip out first before you consume it. It is best to spray your rack with non stick spray so your meat won’t stick to the rack.

A lot of people are so conscious about their health. That’s why the fitness industry is big business. A good fitness program should have a holistic approach. It should include aerobic and anaerobic workouts and an eating regimen. This eating regimen is simple and everybody knows it. It involves grilling, steaming or eating things raw. I personally prefer to grill. What most people don’t realize is they don’t need an outdoor griller to grill. You can use a griddle and just put it on top of your stove. The best ones are cast iron griddles.

What can I say about cast iron griddles that haven’t been said already? When it comes to cookware nothing beats cast iron. That goes to griddles also. They cook evenly and are almost indestructible. It can become a family heirloom of yours. They are also heavy and stable. They won’t easily fall off your stove.

Ceramic knives

I was introduced to these special knives in one of Ming Chai’s TV shows in Food Network. I was intrigued by the white knife that Ming handled so gracefully that could cut with precision. No other chefs in the Network used the same kind of knife. It turns out that Ming was using a ceramic knife. Ceramic knives are made of very hard ceramic, often zirconia. If hardened steel ranks 6.5 in the scale of mineral hardness and diamond ranks 10, zirconia ranks 8.5.

Ceramic knives are very hard and therefore can retain their cutting edge longer. They make a great culinary tool for slicing and cutting but they are also very brittle. They should never be used for chopping or cutting into bones and frozen meat. They have other qualities that make them useful in other ways. Because they will not rust, ceramic knives are useful to SCUBA divers. They are also nonconductive and nonmagnetic making them useful in bomb disposal operations.
