pressure canner

Your garden rewarded you with a bumper crop and you want to reserve them for future use. Putting them in the refrigerator will assure you of its usability for maybe a maximum of a week. Pressure canning is a safe and economical method of preserving low acid foods which include most vegetables. It is used by home gardeners and big scale canning industries. This project will require the use of a pressure canner.

A pressure canner is made out of stainless steel or aluminum. It looks like a regular pressure cooker except that it has a pressure dial on the lid. It works by increasing the pressure within the tank to 11 psi. By raising the pressure, the temperature at which water boils goes from 212 degrees F to 240 degrees F at sea level. With the pressure canner, guess work is eliminated in coming out with perfectly preserved foods. Seeing your rows of pressure canned veggies on the shelf will be a personal satisfaction.
