Peel and trim fruits and vegetables with ease. Use a paring knife with the classical shape. This has a center-tip style with curved back and edge. It is very versatile to use and allow for excellent control of the blade.

The blades of paring knives measures between two to four inches or five to ten centimeters. They are mainly straight bladed although some are curved. Buy one with a tang that is the full length of the handle with a good sized bolster. This will prevent your fingers from slipping onto the blade.
