How amazing to watch experts deconstruct a fish by separating the flesh from the inedible parts. With a very sharp filet knife, incredible knife skills and years of experience, filleting fish is almost an art. The filleting process is very much dependent on skill. It takes years of experience to cut the flesh from the bones in one fast stroke. Even the skilled need to be careful or they might end up filleting their fingers.

Fillet experts need a special tool to perform this task. Fillet knives are very flexible boning knives with long blades – about 15 to 28 cm. The construction of the knife makes it very easy to move along the backbone and under the skin of the fish. The knife should be thin and very sharp enabling slicing at a flowing pace. Not everybody need to learn how to fillet. You can just walk into a fish store and ask experts to do it for you. You can also just pick up fillet fish already packaged and ready to cook.
