Straight to the Oven

As a food enthusiast and blogger I make it a point to not only try out various restaurants in my area, I also do a lot of cooking in my own apartment as well. Food has always been part of my life, as my mother runs a restaurant. I on the other hand, simply wanted to follow the same direction but I am giving it a different take this time. I write about what I eat.

Rarely do I get a chance to prepare a few meals in the kitchen given my busy schedule, but when I do I make it a point everything goes just perfect. I would usually make use of my ever reliable Old Mountain cast iron for cooking. This is more convenient especially since most of my favorite recipes require searing or sending them out to the oven. This way, I no longer need to transfer from one pan to another, making it much more convenient for cleanups!

Of course you want your cookware to be able to be of service for a long time. Cast iron cookware is probably the most durable cookware available. Proof of this is when you find them hidden in infrequently visited cabinets, in storage rooms and basements. They may be rusty but they are still whole, with neither chips nor cracks. If you have the patience, you can give it a good scrubbing and seasoning and you will have a totally serviceable piece of cookware.

When you find one of these rusty treasures, hold the urge to throw it away. Get a steel scouring pad and get to work. Once you have scrubbed off all the rust, wash it with regular water until it runs clear. Dry it in the oven for about 20 minutes. After cooling, it will be ready to be seasoned.

Are there still places where you will not find cast iron cookware? You will find cast iron cookware in remote country homes as well as modern city dwellings. In stores, they are displayed side by side with gleaming non-stick aluminum ware, the symbol of the modern kitchen. Cast iron griddle is the more popular kind of cast iron cookware that we are familiar with. But did you know that there are also teapots and baking pans made of cast iron?

We have always associated cast iron cookware with campfire cooking. The reason for the popularity of this kind of cookware in camping is that you can use it on almost any form of fire, however crude. You can set it up on pieces of stone harboring wood flames in its midst. It may not sit as level as you would want it, but it will distribute heat just as evenly. You can set up a tripod and cook your favorite stew in a pot hanging from it. Give it time and it will cook your meat to your desired tenderness.

A lot of people are so conscious about their health. That’s why the fitness industry is big business. A good fitness program should have a holistic approach. It should include aerobic and anaerobic workouts and an eating regimen. This eating regimen is simple and everybody knows it. It involves grilling, steaming or eating things raw. I personally prefer to grill. What most people don’t realize is they don’t need an outdoor griller to grill. You can use a griddle and just put it on top of your stove. The best ones are cast iron griddles.

What can I say about cast iron griddles that haven’t been said already? When it comes to cookware nothing beats cast iron. That goes to griddles also. They cook evenly and are almost indestructible. It can become a family heirloom of yours. They are also heavy and stable. They won’t easily fall off your stove.
