The blade is the most important part of the kitchen knife. A full tang blade or one that continues down to the end of the handle is often preferred. They are more durable and will cut smoothly.

The ability of a kitchen knife to stay sharp is a quality that is desired in any kind of knife. Some knives will hold a constant edge; others will need regular sharpening maintenance. How the knives are stored also has a lot to do about how the knives perform. Never put them all together in a drawer. It is best to keep them in a block, preferably a wooden one.

Stainless steel is the most common material for cutlery used today. But that was not always so. The first spoons were made of horn or wood. They were also of a different, more impractical shape. Later, castings of bronze, brass, pewter and sheet tin became fairly common. Traces of the primitive knife, such as the incurved shape at the top, or the beveling of the metal to achieve an edge, are still present in some of our styles today. Handles at first were only long enough to allow a firm grip for carving.

Today, American cutlery comes in different forms. There are paring and steak knives, big and outdoorsman knives. Most are made of stainless steel and carry a lifetime warranty. They can be bought individually or in sets ready for gift giving. American cutlery also offers related kitchen products such as knife sharpeners and wooden blocks.
