It is always good to have the right kind of cookware when you’re in the kitchen. Acquiring cookware depends on what you need, your style of cooking, and your budget. Buying a complete cookware set can be logical as it is cheaper in the long run, but you might end up not using a lot of pieces. Sometimes it is better to buy piece by piece, and then expand your cookware as the need and budget dictates.
Usually, you can start off with a sauté pan, a sauce pan and a stainless steel stock pot. A 12-inch sauté pan can be perfect for cooking steaks, chicken, fish and vegetables. A 3-quart sauce pan is good for making sauces, steaming vegetables and cooking small amounts of pasta. The stainless steel stock pot, which is usually heavy-bottomed, is great for soups, stews, large amounts of pasta, or larger pieces of food like turkeys and lobsters.

There are basically about half a dozen kinds of vessels where we cook food. Stainless steel cookware is a difficult piece to use. It can heat up fast and burn food if you are not careful. Non-stick cookware is my favorite. It is good for simple frying and sautéing but should be avoided when you have to cook at very high temperature. Cast-iron is good for grilling and stewing. It can stand long cooking time. However, cast iron can be a pain when clean up time comes around. Another favorite are glass and silicone bake ware. It saves you time by cooking food in the oven with very little intervention.
